Plums infusion

I have some plums left over, I think I might make a white wine plum

infusion. How many grams of plums would you guess to use for a 3 liter bottle of

wine?

Plum vapor infusion, using white wine: I don't think you will get much taste, the method only works with exceptional cases of fruit. BUT: nevertheless you should try it once with a small amount, e.g., 1.5 liters (50 fluid ounces) of wine and 220 g (0.5 pounds) of chopped plums, don't forget to leave the stones undamaged and to add them to the steamer basket.

I wanted to tell you about how I saved a poor batch of plum distillate. About 6 months ago I used some plum wine I had made from very nice high quality organic plums. However, my temperature readings were somehow very wrong and I continued to distill well beyond the point I should have stopped. So I had some low alcohol spirits that tasted insipid. The alcohol was around 20% and there was not much aroma.

Rather than try to make a gin or even throw it out, I decided to redistill it using a basket of fresh fruit as an infusion. It seems to have worked wonderfully. I produced about 750 ml at 50% alcohol with a very nice aroma. The basket contained about 450 gm of fresh finely cut plum (about 1 pound).

I will next cut it to 43% alcohol and aerate it then try to avoid drinking it for at least a year.
