Have a lot of cherries at home now I want to make a cherry brandy. Should I make a conventional or high grade mash? With stones? Sugar?

Hi andrea,

make a high grade mash with sugar,, so you obtain app. 20% vol alcohol in you mash. with stones. Pay attention to the temperature, when the mash ferments your room should have a temperature of 16-18°C otherwise you will lose a lot of flavour because the fermentation would be very fast.
