High Quality Fermentation

I am finally set up to do a high quality mash with the needed refrigeration in our wam climate. I’ve started the fermentation with turbo yeast and it is fermenting but going very slowly. The temperature is set to 66 degrees F. Is this normal? I’m following the book instructions and have divided the extra sugar into 3 batches. I’m on batch two now with one more to go.

As long as fermentation is running, everything is in order. The mash is fermenting, if you recognize a pungent smell in the barrel. To speed up the fermentation you can mix the mash
two times a day (for two or three days) with a drilling machine stirrer to stir varnish. The yeast is breeding with air and produces alcohol if no air is available (cask is sealed with cover and fermentation lock).
